Texas Chili

Best Chili in Texas!

Ingredients

  • 2 T. Butter
  • 2 T. Olive Oil
  • 1 Large Onion, chopped
  • 2 cloves Garlic, minced
  • 3 T. Chili Powder
  • 2 T. Smoked Paprika
  • 2 tsp. Cumin
  • 1 tsp. Oregano
  • 1 28 oz. can Crushed and peeled tomatoes
  • 1 6 oz. can Tomato Paste
  • 28 oz. Water (or same amount as your crushed tomato can.)
  • 2 1/2 - 3 lbs. Ground beef, cooked
  • 1 tsp. Salt
  • Freshly ground pepper to taste
  • 1 Fresh jalapeno, seeded and chopped
  • 1/3 Cup Masa Harina flour

Instructions

  1. Over medium heat, saute the onion in 2 T. butter and 2 T. olive oil for 6 to 8 minutes, do not brown. Then add 2 minced garlic and cook an additional 30 seconds.

  2. Measure the chili powder, smoked paprika, cumin, oregano in a bowl. Add to the onion mixture and saute for 1-2 minutes.

  3. Add in the can of crushed tomatoes and tomato paste along with water, mixing.

  4. Add the cooked ground beef, salt, pepper and jalapeno. Cook for 45 minutes.

  5. Add masa harina flour to thicken the mixture. Cook an additional 20 minutes.

  6. Taste and adjust seasonings if necessary and serve. Yeehaw!
